This week’s recipe was a type of custard-y dessert and let me tell you, we LOVED IT!!!
It has cherries in it, pits in of course, which we didnt seem to mind at all – especially since the cherries still retained all their juices and flavor! But as I had carefully jammed as many cherries into a single layer as I could in the bottom of my ramekin, I was shocked and slightly panicked when I poured the custard in and they all started to float! For whatever reason, I figured this was not supposed to happen, otherwise, what was the point of making sure there was only a single layer of cherries in there?? *sigh*
But they rose, floated and bobbed around as I slid the entire ramekin into the oven and baked.
And baked some more.
And just when you thought it was done…. it went in for another ten minutes!
I think my total bake time was nearly 70 mins!! So I’m not sure what that means for my custard but we took it out just after it set up and I can tell ya, if there was a precise time limit, like on Masterchef? I would have been sent home. Easy. But alas, just the girls and the husband unit were interested in how soon they could eat it and that was the most pressure I felt in putting this together. It comes together very quickly and I could see putting this together for a last-minute-company’s-coming dessert!
I really loved the crust on it though, it reminded me of the baked NYC cheesecake crust, you know the buttery, golden crust on the edge?? I LOVE that… that edge makes a cheesecake in my book and this custard had it – so automatically, I swooned! I also added a teaspoon of cherry brandy to the custard and it made for a very cherry custard which just made it even better. But I have already started calculating the number of different fruits and things that I could bake into another clafoutis – although instead of one big ramekin, I think I will be making little individual ones instead… much cuter and easier to keep little hands with spoons out. I’m pretty sure there was a section of it missing this morning when I got up and its really a toss up as to who ate it… LOL!
On other news, today is my husband’s birthday and our 5 year wedding anniversary!! Yay!! We made it this far with a beautiful 3 year old “puppy,” and two wonderful little girls, Mei – who will be exactly 2 1/2 years old tomorrow and Emily who will turn one!!
I will be baking a cake later on this weekend to celebrate, any suggestions? Since we don’t know anyone here, we will just be celebrating Emily’s birthday here with our small little family. And probably playing outside with her new water table! She is certainly a little water baby and is LOVING anything to do with water play!
